Good butcher paper has to stay strong when it’s wet. Raw cuts leak, a hot brisket sweats fat, and cheap paper tears right when you lift it. Our paper is made from long-fiber kraft, so it holds heavy cuts without splitting. It comes in weights from 30 to 90 gsm. Most smokehouses use around 65 gsm, the common “40 lb” weight, for brisket and ribs.
- Pink/Peach Butcher Paper: The pitmaster’s pick for wrapping brisket on the smoker. It’s unbleached and uncoated, so smoke and steam can escape. The bark stays firm instead of going soft, which often happens when you wrap in foil.
- White Butcher Paper: Clean and bright, made for meat counters, delis, and sandwich shops. It’s the look customers expect when they buy meat at a butcher shop.
- Brown Kraft Butcher Paper: Natural and unbleached, with a rustic look. Use it to line trays and baskets, wrap sandwiches, or cover tables at a BBQ joint.
Coating matters too. Keep the paper uncoated for smoking, since wax melts on a smoker. We print in CMYK or PMS colors, single-color or full-color, on one side or both. Most brands choose a repeating pattern so the logo stays visible no matter how the paper is torn or folded. All printing uses food-safe inks.
We cut any size, but these are the most common:
- Rolls: 18, 24, and 36 inches wide. An 18-inch roll suits ribs and pork butts, while a full packer brisket usually needs 24 inches.
- Sheets: 12 x 12 and 15 x 15 inches for sandwiches and basket liners, and 18 x 18 inches or larger for tray liners and wrapping steaks.
